A few months ago I bookmarked this recipe for green and chickpea puree on DearBaby, but I hadn’t introduce chickpeas to Ollie yet. Now that I have, he’s not so into the purees, so I decided to try a slightly different take on it.

I followed the recipe just as Melissa wrote it, but after I pureed it I returned it to the skillet and cooked it up, pancake style. I also tried a batch baked, like cookies, and left some puree in case Ollie felt like a spoon feeding.

I served up the cakes with sweet potato fries (tossed in a little olive oil and curry), and Ollie seemed pretty pleased with the results!
